Processed sugar. It's everywhere. You think that if you avoid pastries, cookies, desserts, and candy you are doing pretty well, right? Well, it's not that easy. One can of soda pop contains 10 teaspoons of sugar. Unbelievable! And if one reads food labels, one can find processed sugar (sometimes hidden as sucrose, glucose, corn syrup, rice syrup, or other names) in breakfast cereal, spaghetti sauce, bread, salad dressing, baby food, crackers, apple sauce, fruit juice, jams and jelly, luncheon meat. Sugar is very rapidly absorbed into the blood stream. This rapid rise in the sugar level results in the secretion of insulin by the pancreas. The responsibility of insulin is to decrease the blood sugar level when it is too high. While this is the body’s normal and healthy response, research has shown that when we consistently force our bodies to secret extra insulin to deal with our high-sugar, high-carbohydrate diets, the body can eventually become de-sensitized, prompting an over-secretion of insulin. This is not healthy, since excess insulin can also rob glucose from tissues, such as the brain, resulting in any of the numerous symptoms associated with low blood sugar, or hypoglycemia.

While sugars and other simple refined carbohydrates create rapid rises in blood sugar levels (and the accompanying insulin spike!), eating complex carbohydrates (whole grains, beans, fruits, vegetables, etc.) can ease these rapid swings.
